Trim and discard the root of the leek, as well as the dark leafy greens on the end.
Slice the leek down the centre and remove any outside leaves that are a bit loose.
In a bowl of water, rinse the leek carefully (taking care to get all under the layers).
Drain your leek, then dab dry with paper towel. Your leeks can then be prepared as you would for any dishes (think: soups, stews, casseroles and quiches).
