These taco salad bowls are piled high with seasoned ground beef, creamy avocado, fresh veggies, and crunchy tortilla chips.

A modern spin on the classic Mexican taco night, these Ground Beef Taco Salad Bowls are brimming with toppings, and a huge hit with my kids! When I need a quick and easy weeknight meal, it’s easy to put out the toppings and let them build their own dinner.

Ingredients

  • Ground beef: My preferred is ground sirloin which is 90% lean, but you could use ground turkey, ground chicken, or even ground chuck.
  • Lettuce: I like to use romaine lettuce, but you could use shredded iceberg or cabbage as well.
  • Taco seasoning: Use store-bought, or my homemade taco seasoning!
  • Toppings: Red onion, corn, tomato, avocado or guacamole, crushed tortilla chips, and fresh herbs like cilantro are what we like to top our salads with. You could also try cotija cheese, salsa, olives, and black beans!

How to Make Ground Beef Taco Salad Bowls

Step 1. Start by browning the ground beef in a skillet, and season with the taco seasoning. Add the corn the last minute or so to warm through.

Step 2. While meat is cooking, prepare your toppings. I like my onion finely diced.

Step 3. You could use fresh pico de gallo, or just add chopped tomatoes.

Step 4. Fill your bowl with lettuce, then top with the cooked ground beef, and any of your favorite toppings.

I personally don’t think the salad needs a dressing, but if you’d like a little something to drizzle on top I highly recommend my honey-lime vinaigrette. Serve and enjoy your Ground Beef Taco Salad Bowls!

Ingredients
  

  • 8 cups chopped romaine or shredded cabbage
  • 1 avocado pitted and diced
  • 1 cup red onion minced
  • 1 cup tomato diced
  • 16 tortilla chips
  • 1 cup cilantro roughly chopped
  • jalapeno slices and lime wedges optional, to serve

Instructions
 

  1. Heat a large skillet over medium-high heat and drizzle with olive oil. Add ground beef to the pan and begin breaking down using a potato masher or wooden spoon. Sprinkle in taco seasoning mix and cook until beef is browned about 8-10 minutes. During the last minute or so of cook time, add in the corn and heat until warmed through; remove from heat and set aside.
  2. To assemble taco salad bowls, fill four bowls with two cups of lettuce of cabbage as a base. Top with equal parts beef and corn mixture, red onion, tomato, avocado, and tortilla chips. Garnish with cilantro, lime and jalapeno slices if you wish.

Liz’s Notes

I don’t typically use a dressing with this salad as the beef is flavorpacked and the creamy avocado becomes a bit of a dressing when I mix everything together. If you wish to drizzle with dressing I recommend my honey lime vinagirette recipe
Swapping out guacamole for the plain avocado or pico de gallo for the tomatoes and onions is always a good idea.

    This taco bowl was delicious. The lime dressing was refreshing, I included the lime dressing for variety, but the salad itself was excellent.
