Risotto recipes have never been this easy! We’ve rounded up our favourite risottos you can whip up with the contents of your fridge (and pantry).

Risotto is an Italian rice-based dish that involves a slow process of introducing stock into the rice, stirring it until it absorbs. It works well with so many different flavours from the classic pumpkin or mushroom to chicken, prawns and so much more. We’ve also included some easy oven-baked versions if you can’t stand the thought of standing over the stove stirring for the whole time.

Which rice is best for risotto?

Here is a breakdown of the most common risotto rice varieties, and how they cook:

  • Arborio: the most widely available, this produces a thicker, softer risotto but is less forgiving of overcooking.
  • Carnaroli: this produces the creamiest of risottos and retains a little bite.
  • Vialone nano: this is from the Veneto region of Italy. It’s a stubbier rice, traditionally used to make a looser style risotto that includes seafood.
