How to tell if a banana is good to use for a cake
Overripe bananas are the ideal ones to use for baking. They have the highest sugar and lowest fibre content. For more information on what to use bananas for at different stages of ripeness, see this article on buying, storing and cooking with bananas.
Do you have more recipes for banana bread?
We sure do. A banana bread is so versatile, and over the years the Test Kitchen has come up with many variations. To start with, try our basic banana bread recipe, which includes four tasty variations. We also have an air fryer banana bread and gluten-free banana bread. For something retro, bake this banana caramel loaf cake.
How to store bananas
Store bananas at room temperature out of direct sunlight. Bananas will ripen more quickly kept on the bunch, so separate them to slow down ripening. Additionally, you can wrap the stem with aluminium foil to reduce the release of ethylene gas.
Freezing is a great way to extend the life of browning bananas. Freeze peeled, ripe bananas in a ziplock bag or airtight container for up to 3 months. Frozen banana works great in a banana smoothie.
