Test Kitchen tips for slice recipes

The Australian Women’s Weekly Test Kitchen has made its fair share of slice recipes over the decades. So here are our top tips to keep in mind:

  • If your slices aren’t baking as quickly as you want, consider using an aluminium tray. Pans made from tin and stainless steel don’t conduct heat as easily.
  • Preheating the oven is important for baked slices as most require less than 30 minutes of baking. So, preheat for around 10 minutes before placing the slice in the oven.
  • Make sure slices are cool or at room temperature before adding any icing, which could be absorbed if the slice is hot.
  • If a slice recipe recommends a particular size of tray, aim to get as close to that as possible. Otherwise, you could end up with a slice that bubbles over (in a smaller tray) or one that’s very thin (in a bigger tray).

Can a slice be frozen?

Most slices can be frozen for up to two months, but those with icings and cream fillings may crack and change in appearance as they thaw.
