History of the New York cheesecake

It’s hard to beat the classic baked New York-style cheesecake with its silky-smooth texture and luscious sour cream topping.

In the early 1920s, deli owner Arnold Rueben (yes, creator of the famed sandwich) was experimenting with a traditional curd cheese pie recipe when he came up with an idea to use cream cheese instead. And so, the baked New York Cheesecake recipe came into being. Versions were added to the menus of various eateries across not only the city but eventually the world.

But Arnold can’t take all the credit for this delicious dessert. Cheesecake’s origin story dates all the way back to Ancient Greece. Originally called “libum”, athletes at the first Olympic Games in 776BC were served the treat ahead of competing. It was made from cheese, flour and egg, and baked in a hot fire before being drizzled with honey. When Rome conquered Greece in 146 BC, they took the recipe along with the rest of the war spoils.

Romans would add the pastry crust to the cheese filling and gradually the sweet treat spread throughout Europe. The treat made it’s way to France where Neufchâtel – a soft, mold-ripened cheese – was used for its soft, slightly crumbly texture and sharp taste.

With a dearth of the French cheese in the US, in 1872 dairy farmer William A. Lawrence was attempting to create his own. Accidentally adding cream into the process, he stumbled across his new creation “cream cheese” which he would go on to mass produce… Arnold being one particularly happy customer a few decades later for his baked cheesecake recipe.
