I don’t want to jinx myself but I think it is safe to say that grilling season has finally arrived! After a ridiculously long winter, I am thrilled to be reunited with warm breezes and the sweet smell of dinner cooking on the grill. Radish season has not quite begun here so I was pretty excited when my friends at Dandy Produce asked me to create a recipe with their crunchy and delicious Radish MiniSticks.

Ingredients
 
 

Apple Radish Slaw
  • 1 in granny smith apple sliced matchsticks
  • 1 cup carrot matchsticks
  • ½ cup Dandy radish ministicks or 14 radishes cut in matchsticks
  • ½ cup scallions diced
Honey Lime Jalapeño Vinaigrette
  • 3 tablespoons honey
  • 3 tablespoons extra virgin olive oil
  • 1 juice of lime
  • 2 tablespoons jalapeño minced
  • 1 clove garlic grated
  • ½ teaspoon salt
  • 2 tablespoons fresh mint minced

Instructions
 

  1. In the bottom of a large bowl, whisk together the vinaigrette.
  2. Add slaw ingredients to the bowl (apples, carrots, radishes and scallions). Toss well and check for seasoning before serving. Adjust accordingly and serve.

Liz’s Notes

For a mild vinaigrette, remove the seeds from the jalapeño before mincing because that is where the heat lies.

    I love this recipe, I have made it many time. I am not one to follow recipes but this one is a keeper. The only change is I double the apples. I always make this to top BBQ pulled pulled pork instead of the traditional coleslaw. It is a healthy alternative for a BBQ as most BBQ recipes are not diet friendly. Thank you so much for posting this recipe years ago, as it is a crowd favorite.

    This looks like a great recipe! What is the yield on this recipe? I need to convert it to feed 225 people. I’m guessing 4 but not sure.

    I made this as an accompaniment for my mahi mahi tacos last week. Absolutely delicious. I belong to a CSA-type group that supplied about 20 huge crimson radishes, red onion, carrots, apples, jalapenos, cilantro and other things that I needed to use. I substituted red onion for the scallions, a sweet red apple for the granny smith, and cilantro for the mint. Most of my family loved it, and we used it not only for the fish tacos, but steak tacos the following night and chicken tacos two nights later. All gone now and I’m looking forward to making another batch.

    Yummy! So glad to see another use for radishes. I never know what to do with them other than throw them on a salad. We are going to make this to go on our paelo inspired salmon tacos. :)

      We host potluck dinner every Friday for our 4 kids’ soccer teams that my husband coaches. This morning I harvested radishes from our garden and wanted to serve them with pulled pork that the main fare. This slaw was a homerun side dish and stole the show! So glad it popped up in my search!

    I couldn’t agree more a great way to utilize the peppery radish. And I do like your use of honey in many of your recipes. Btw your lemon tonic sure does the trick for clearing mucous.

    What a great healthy and light slaw!!! Not a fan of the mayo-y and heavy types… Don’t even know if mayo-y is a word but who cares.. lol
